The recipe is super easy. Chop a quantity of onions, toss them is a Dutch oven and cover with water, when the water is mostly evaporated, cover the onions in water again, repeat 6-8 times, until you have the desired flavor and color, or you get bored. Season with salt, pepper, & a pinch of nutmeg.
