The images are from a range of Tokyo and Kyoto eateries. It features the food section of the immensely popular Nishiki market, also known as Kyoto’s kitchen.

This absence of any veil of pretence separating diner and kitchen, preparation and experience, encouraging people to be fully absorbed in a personal moment.

But when I think of eating naked, I think of sitting or standing around an open kitchen. From ticketed ramen shops, neighbourhood izakaya, standing and converter belt sushi diners they all follow the same principle.

Eating naked / Japan tripping

When you explore Japan through its food at popular eateries nakedness manifests at every stage - in how food is prepared, presented and consumed. Ingredients are easily discern-able. Cooking brings out natural flavours rather than masking them.

“My theory is that the map we currently have in our heads no longer matches the territory we are in. We’re waiting for someone to draw a new map, and until then, we’re just going to witter away to each other on podcasts.” - Adam Curtis, documentary filmmaker

Reminds me of the time I was at the Taj Land’s End coffee shop at night and there was a very large rat running around. When we pointed this out, one of the staff stomped on it with his boot and killed it. Took up a napkin from the next table and used it to pick it up and walked off.

One of the churches in my #Bandra neighbourhood has a tradition of holding a musicians mass every year for the feast of St Cecilia. What a lovely idea.
