Like, stop thinking about buildings and think about coffee tables. Imagine a hundred years ago when IKEA didn't exist and if you wanted a coffee table you were getting a hand made object from quality lumber cuz cheap mdf did not yet exist and that's it, that's the whole thing.
This is actually a simple one. Everything about making a building used to be really fucking expensive so the marginal increase in cost of making it look a little nicer while you were building it was infinitesimal compared to the marginal cost increase of adding that shit to modern rapid construction

So you end up with tech companies that exist cuz a ton of under-taxed investors say "well that probably won't work but in case I'm wrong I'll throw a little money at it for a taste"; people who know the product is bullshit but need a job know that and can raise money off it; engineers need rent
