coconut chutney: blend coconut, green chilies, a small piece of ginger, salt, Dalia/pottukadalai.
Heat ghee/oil. Splutter mustard seeds. Add cashew nuts, pepper-cumin powder and fry until cashews turn reddish gold. Add ginger, curry leaves.
Add cooked rice mash.
Mix everything together. Finish with a drizzle of ghee.
Serve with coconut chutney.
Ingredients:
Pressure-Cooked (12 minutes in instant pot) rice + mung dal (I used equal amounts of white basmati, barnyard millet, and
yellow mung dal)
Salt
To temper:
2 tbsp ghee/oil
Handful of cashew nuts
1 tbsp each pepper and cumin, coarse ground
Curry leaves
1 tbsp finely chopped ginger
