If you haven't updated Arch in the last 100 days and you are running into a dependency conflict with the "rest" package when you attempt to run pacman -Syy and pacman -Syu the solution in many cases is simply: "pacman -R rest"

That is the core of it. Redis will get moved to AUR, so Valkey it is. As a fork of Redis it is pretty much a drop in replacement. Same API, protocol, and command structures.
