(short version - after setting up ssh keys, on the machine you would've otherwise installed gitlab on, all you need do is

$ mkdir project.git
$ cd project.git
$ git init --bare

then on your local machine

$ git remote add origin git@{yourserver}:/path/to/project.git
$ git push origin master

From what I understand of your requirements, you can achieve all of them without installing gitlab at all.

(I'm curious because I've only ever done the latter—and I only did that much because I was collaborating with my spouse on a project)
