Steamed Swordfish with White Wine

I used the same way that I had posted yesterday as Steamed Chicken Breast. This way is also effective to steam swordfish and tuna that become dry after cooking.

Some treatments are necessary before steaming. Slice chicken breast thinly about ¼ inches. Mix the about same amount of cornstarch and sake or white wine to make thick batter. I think 2 table spoon each is enough.

Peppery Pork, Potato, Brussel Sprout Stir Fry

The seasoning is just salt and black pepper, but I put a lot of peppers in this dish. So it is spicier than usual. Potatoes and Brussel sprouts are cooked separately with microwave first.

such as fish sauce, lime juice, tamarind paste, palm sugar, garlic and shallot. I should had used a bit thicker rice noodles, but I didn’t have them. Other ingredients are popular ones for Pad Thai.
I think the most important ingredients are tamarind paste and fish sauce, so don’t omit them.

The vinaigrette is made by kumquat, white wine vinegar, extra virgin olive oil, honey, dried mint and salt. After remove the seeds of kumquats, they are puréed by a blender. I also mixed sliced kumquats with snap peas and cauliflowers.

Potatoes are usually boiled and mashed or sliced and arranged in a pie dish and then baked.
My way is that cooked the sliced potatoes and then arranged them in a pie dish.
I used spinach, sausages, parsley and soy milk instead of milk/cream.
