When you hit zero Flesh, you are Gloriously Fucked Up. This is not death. This is the Cathedral's thesis suddenly, to its surprise and horror, encountering a counterargument. This is the anointing of Lucifer, the dark blessing you received for your mission. Create a Wreckage Tag. This is a description of the damage and the adaptation created in a gruesome reorganization of blood and bone. Left arm, gone, upgraded with a writhing cluster of dexterous blood tentacles. Stomach, entrails left in hanging tatters, replaced six-pack with six shotguns. Right shoulder blade, shattered, a (snarky) snapping turtle head emerged like a warped pirate parrot.

Your Wreckage Tag is a Tag now. It works like any other for building your dice pool, which means it complicates your actions and it is a specific thing the Cathedral did not plan for when they designed their security for intact human beings. (You subtract or add dice, following the fiction). You are no longer an intact human being. Once per scene, you may also invoke one of your Wreckage Tags to do the otherwise impossible. No roll. Shepherd says yes. What you do now with what remains is the only question that matters. When you go down, someone spends their action to get you moving by manually pulling the pieces together or squeezing the wounds closed, a twisted laying on of hands. That is the cost to trigger the transformation and move again.
