I'll admit I haven't seen research yet on changes in empathy after media users interact with IRL people, but in terms of interacting with fictional media, the answer seems to be yes and in a positive direction.

With influencers/IRL relationships, some studies show that the relationship is more contingency based, e.g., buying the influencers products, supporting their brand, etc. These studies tend to include influencers with brands, though.
Hi Nic! Yes, parasocial relationships (also called mediated relationships when in context of media connections) can exist in IRL contexts (influencers, content creators, online personalities, etc.). Some studies show that fictional parasocial relationships lead to more empathy!
