I agree though, I love sinking my teeth into something where my progress is gated by my own mechanical skill.
I'd say there's many different kinds of skill - take Hades for example: mechanical skill goes hand in hand with the thinky *skill* of putting together powerful synergistic builds throughout a run.
The meta progression adds another dimension to this too, but imo that's more of a soft difficulty tuner
