I got very relaxed with my eating over the past several months. Some days would be as little as 500 calories and others considerably more. I think it’s just brine to dial it in a bit.

The chopper? Yeah. I love it. I didn’t think I would. But since I can’t stand comfortably for long periods and I don’t find chopping vegetables with a knife while sitting to be comfortable this is a great compromise for me!

I think if I was eating fast food I could hit 1600 cal fairly easily. But 1600 cal of healthier whole food options is proving to be a challenge. 🤣

Weird weight loss win. At 321 pounds every fitness equipment purchase (as well as mobility/ADL aids and step ladders) had to be evaluated for weight limits. At 225 I’m now well within the weight limits for almost all equipment. That’s pretty cool.
If I can manage to eat 2 meals and a snack today I’m still not at 1600 calories. But at least I’ll be over 1200. Eating more food is harder than I thought it would be.
Here’s my brunch. And my daily food. Keep your fingers crossed that I can eat it all. 🤣

You definitely should try it! Buy a small container at first make sure you like it. But then buy it in bulk because it’s way cheaper that way!
I used it a lot when I was vegan, even made a vegan “queso” dip with it. I like it on damn near everything. 🤣
I just ordered some nutritional yeast because I think that would be great sprinkled on top! I also have some Cotija cheese that I’m going to try!

It does!! I’ve seen people say that you can eat it with chips! Which seems like a great idea if calories aren’t a barrier.

I realized I forgot to add the cumin to the dressing. So I just sprinkled some on top mixed it, sprinkled some more, mixed it, sprinkled some more. Because you can never have too much cumin!!
I’m substituting great northern beans for the red kidney beans because I’m not a big fan of red kidney beans. But you could pretty much use any bean you wanted to!

Okay. Meal plan for the next few days kinda sorted and grocery order placed because I can shop or I can meal prep. I can’t do both today, not enough spoons.
Breakfast: Egg McMuffins on light wheat English muffins with chicken sausage patties.
Snack: Apples & peanut butter or cottage cheese.
