When it’s finished it’ll ask for your passcode because it’s rebuilding the file system but all your files will be retained.

If you manually update iOS from a computer, it’ll clean like ~10 GB from the OS files usually. You put your phone in recovery mode (follow these steps support.apple.com/en-us/118106) and choose Update, not restore.
