I can't say I've ever had a potato go black on me - cut, wash until the water stays clear, then rough up the edges and put in a fridge for a day or 2, edges go white, then roast in goose fat - white edges go super crunchy and crispy 😍👌

Nahh, best is about 25 mins, starting with cold water. Then leave for a few days in the fridge for the edges to dry out, then roast in goose fat 😍👌 crispy and fluffy perfection
