On a warm night what better than soft, salty shrimps bathed in lemon juice, olive oil and black pepper alongside homemade avocado salad and potato salad.

I’ve been bemoaning that you can’t get crumpets here in Madeira, so this afternoon I made my own as an experiment. A bit hit and miss because I don’t have any crumpet rings yet but they tasted far superior to bought ones.

Once cooled I’ll inject the pies with my Jamón stock which will turn to jelly.
