My son has just sent me a link to flour he saw a GF blogger using for bread. She's a tiktokker so I couldn't see her post 😂 but the bread looked fantastic and springy. The flour is Mulino Caputo, an Italian GF flour. Expensive at £8/kg but if it's complex carbs I'll give it a go.

I'm diabetic and about to get a rollicking about my HbA1c being a bit high, as well as my lipids. I think they want me to just eat salad, as everything else is either a sugar spike or a fat spike. No more cheese or nut snacks 😩
