multiply by 4 (and add 2 eggs) to make 24 full-sized muffin pan sized ones
1/4 cup shredded cheddar
1/4 cup cottage cheese (full fat, 4%)
2oz Neufchatel Cheese
1Tbsp Starch (Potato or corn)
4 Eggs
salt to taste (probably about 2tsp)
pepper to taste (probably about 2tsp)
Blend ingredients together until smooth
Pour into mini muffin pan, with your choice of fillings added
Place pan into other larger pan with a hot water bath in it
CAREFULLY place in oven
Bake at 300F for 35m
Remove, cool, and refrigerate for up to 3 days, or freeze for up to 3 months (thaw in the fridge and microwave on half-power for ~1m)

well, that and there's a lot of land in the way that is owned by people who will *refuse* to sell that land so a rail can be put through it
