120°c for 5.5 hours. 30 minute rest.
Rub: paprika, salt, pepper, onion powder, garlic powder. Mustard as the binder.

Small piece of Tri-Tip from the freezer. Smoked 20min over Oak. Cooked SV at 134F 6hrs. Hard sear on the IR grill. Served with a Chimichurri sauce and a Carrot/Parsnip puree. Shit this was tasty. #BBQmunity 🍽️🍜
