ZZ plants and Sansevieria are basically immortal, just kind of ugly. Pothos is pretty easy too.

Succulents/cactus are low maintenance and you can get some real weird looking ones. You just have to replace the soil they come in or they will die. 30% soil 70% pumice/perlite/little rocks is a good mix

I really prefer boiled sweet potatoes for mashing, but I like them savory with lots of butter, milk, and pepper. They end up too sweet for me when they're baked. If you put them back on the stove for a few minutes after draining them you can get a lot of the water dried off before you mash them
