Spiced Apple Muffins

2 cups flour
3 1/2 tsp baking powder
1/2 tsp salt
1/2 cup sugar 
1 cup peeled chopped apple
1 egg, lightly beaten
1 cup milk
1/3 cup melted butter or shortening

Topping:
2 tbsp brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg

Preheat oven to 400 degrees Fahrenheit. Grease muffin tins or line with paper baking cups. In mixing bowl, sift together flour, baking powder, salt and sugar. Stir in chopped apple. Combine egg, milk,  and melted butter. Add liquid to dry ingredients, stirring until moistened. Do not over-mix Spoon into prepared muffin tins. Filling 3/4 full. Bake for 22 minutes. Makes 12 muffins.

This week at the soup kitchen, I made my mom’s famous (to me) apple spice muffins. They were so popular that they ran out in less than 3 minutes, even though I’d made 36 muffins. Full recipe in the alt text.

Toronto, as always, ruined this for everyone by asking for a bunch of extra tax powers, getting them, promptly cancelling the vehicle registration tax, then taking in money the land transfer tax in good times before complaining about its volatility when tides turned. Then asking for more tax powers.

City council races are also the ones you're the most likely to have an impact on as a person deciding to commit resources (money/volunteer time). Especially worth noting if you can't vote, eg youth or non-citizen.

There's a scenario at least once a month where I say to myself "bike share would have helped here". This week it was that my bike needs a repair and I didn't have time to get to it.

More options = better transportation system.
