TIL that Belgian lambics are artificially scarce thanks to NIMBYism. Traditional lambic brewing relies on wild microflora and cannot randomly expand into the countryside* and as such are stuck in heavily zoned cities, that offer no expansion options.

I used the rochefort yeast expelled from my beer fermentation through the blow off tube to bake it. Trappist sandwich bread!

My parents cupboard (where the beer's fermenting) smells like a sugarcane mill and a Christmas spice drawer. It's divine.

A Trappist style quad! Trappist beers famously incorporate sugar into their fermentables, and specifically dark candi syrup for quads, which is hyper-maillardified (but not caramelized!) sugar. I made my own from golden kohlapuri jaggery and it's maybe the best decision I've ever made.
