Uh, isn't this just Schnitzel? Except sometimes you make Orecchia with bone-in veal.
I've cooked since the early 80s, and at work I still use Victorinox. I just can't see taking a nice knife to work. I do like no belly in a chef's knife, but most Santukos are shorter than my preferred 10". I have a giant drawer full of cool expensive knives, but only really use 2 day to day.
