11. Cheese fridge. It now lives in the basement of my house, maintained at correct temps to keep the cheese happy. It still has much of the cheese (pictured in chonks and rounds on the fridge shelves in this photo) that my late partner made, himself, from scratch. I helped with the stirring.
The real benefit to cheesemaking isn’t the cheese itself, it’s the friends we make along the whey.

I made this on Sunday, it’s having the final salt treatment before it goes in the cave. If I haven’t whiffed it it should be a low-fat, low-moisture cheese in the neighbourhood of Parmesan. I won’t know until at least 2026. #cheesemaking

Here's a fun cheese fact. Stilton cheese can't be made in the village of Stilton, because it was only ever sold at market there, not produced, so when the EU granted the cheese Protected Designation of Origin, the areas designated did not include the village that gives the cheese its name.
