Sometimes I feel like we’re all stuck in that house up the #staircaseinthewoods
All these new horrors every day…
In old Thai literature, Shalāsin ชลาสินธุ์ depicts large, glistening body of water.
พระเหลือบเล็งชลาสินธุ์ ในวารินทะเลวน
So, Shalāsin = Wairarapa
How cool is this? I love languages! (I also love Pinot Noir. Hence the vineyard! 😁)
Flexing my geekiness in naming our new vineyard in Martinborough, in the Wairarapa on the North Island of Aotearoa New Zealand.
Wairarapa means glistening water in Te Reo Maori.
The name is Shalāsin ชลาสินธุ์, a Thai portmanteau of two Sanskrit words: Jala (water) & Sindhu (river or flowing water.)
It’s not?
You could use some roux I suppose. But depending on your potatoes you might not need to. Also make sure you pack the potatoes in tight. And since this is just between us I’ll tell you I often add in some crème fraiche into the cream mixture. Adds a little acidity and richness.
Probably not. But doing it by layer definitely yields a richer result. Not to mention more dramatic.
P.S. you season the cream first obviously, should be a touch saltier than you want the final gratin to be. And add herbs of your choice.
Also sometimes you do a layer of black truffles—thinly sliced naturellement—in between those layers of potatoes. That will do, too.
Incidentally, my friend Rebecca once said this was exactly how she wanted to be buried.
Grabbing potatoes at the farmers market this morning.
Him: How do you make your potato gratin?
Me: So you make a layer of super thinly sliced potatoes. And you drown it in cream. Another layer of potatoes, and drown it in cream. Then more potatoes and you drown it some more in cream. And so on.
Casual, Michelin-starred Kin Khao always be doin' Thai right. Returning this week for the likes of juicy laab tod (pork meatballs) and that killer fried chicken sandwich on Acme pan de mie bread.

Oh wow that’s just so not ok. Really not. So sorry you had to deal with this crap.
Scaremonger: High doses of fluoride is toxic! Let’s stop adding fluoride to water!
Scaremongerier: High doses of water is toxic! Let’s stop drinking water!

I’m sure some of my local stores carry the book. Will check with them first. A bookplate is a great idea!
Would you ship this to me in New
Zealand? I’ll cover the extra postage of course! I need this on my new bookshelf over there!
Call them batards rather than baguettes and claim success!
A number of artists and creators have made their home on Bluesky, and we hear their concerns with other platforms training on their data. We do not use any of your content to train generative AI, and have no intention of doing so.
Hi MiMi! I’ve missed you!
What a pleasure it is to choose whose voice I listen to. I feel slightly more sane already here.
Still don’t quite know who’s here so if we’ve talked or I followed you at 🐥 or 🧵, please ping me so I can follow you here! 🙏🏽
And he won!
Let’s go SF! #DanielLurie
Just got wind of a possible new candidate for the Mayor of San Francisco that’s finally giving me some hope for this town.
sending hugs..
How is this democracy?
14 MILLIONS vs 250
24 MILLIONS vs 250
You do the math.
Whatever your politics, there's no denying that the people want, no, DEMAND change.

(2/2)
Meanwhile in #ThaiElection2023, the landslide of over 14 millions Thais who voted for change--actually over 24m if you include the votes for the 2nd place winner, also an opposition party--is facing a threat of being throttled by 250 junta-appointed senators in the Upper House.

But can you top this?

I like this let’s just go with it 😂
Do you know what this is?
This lunch is a very old Thai classic, ขนมจีนซาวน้ำ Kanom Jin Sao Nam, fermented rice noodle tossed with freshly pressed coconut milk and a variety of sweet fruits, tart leaves, pungent alliums, & white turmeric. Served with grilled fish dumplings in turmeric-scented coconut milk.
Yes, a different thing entirely. Also called finger root ginger. Or Krachai in Thai.
Maybe I’ll just post what I have for lunch every day while I’m here in Bangkok. This is ปลาดุกผัดฉ่า stir fried catfish in spicy chili paste and wild ginger. A simple market lunch but so damned good.
