The horses in Crimson Desert have what I can only describe as "boob and butt jiggle physics".

If you're playing Crimson Desert on PC, I recommend installing the "RenoDX - Graphics Improvements - HDR Rework - Grading Re-Adjustment" mod if you want the nights to actually be dark. It uses ReShade, and it was easy for me to install it, even on Linux.

Something like Voices of the Void where it has very fiddly imsim-like physical interactions. The Last Caretaker is another example of a game that's atmospheric in the way I like.
