I think this is a good approach to improvement. I am barely starting at pixel art, but drawing random stuff that comes to my mind forces me to think and look for references more (and references really help me understand what looks good, what doesn't and what I like more)
Placeholder upgrade! This dude looks like a rock with legs honestly, but it works.

I don't really do "projects", but as soon as I add everything I want to the piece and I feel the "It's done" moment, I rarely fix or add anything later, even if on the next day I feel like it could be better.
Starting a new piece is always more beneficial in terms of experience I think.
