Ohhhhh yes, the brisket was glorious!

One downside to the oven is that it has less of a bark, but dang, still a solid meal of beefy excellence.

At 1am (and 12hrs of smoke) we still hadn’t hit 170 internal (was at 138).

We’re in a cold snap and outside temperatures are -40°f so the smoker couldn’t stay consistent.

I fired up the oven, and things are going well! I forgot to take pics of the process in the panicked rush lol.

A big brisket lovingly seasoned with Salt Black Pepper and Garlic ready to go in the smoker.

This was the Brisket at 1pm seasoned, trimmed and ready to go.

It’s been smoking for the last 5.5hrs and I’m almost ready to wrap it!

A sultry 19lb brisket laying in wait for the tender embrace of salt peer and garlic, yearning for the smoker.

Ready to start the slow smoking party this afternoon!

This 19lb hunk is about to get seasoned and toasty. I’ll be posting progress pics. 😉
