Lentil curry topped with chili paneer

Husband felt that the lentil curry was too mild last time, so tonight I’ve topped it with chili paneer. I can hear him wheezing 🥵😆

The trick as always is a shedload of garlic and chili. 😁 It’s a really good red pepper and almond chili pesto I scored from somewhere (probably my Mum)

Cheat’s ‘cheesecake’
Crumb base (250g digestive biscuits crushed, 75g melted butter, chill)
1 egg yolk & 1 Tb sugar beaten into a 250g tub of mascarpone, dash of vanilla, whisk 1 egg white stiff, fold in. Top base & chill.
Top with fresh or fruit sauce (250g fruit to 50g sugar, dash lemon juice)

Cat is most definitely feeling better. Have just disposed of a rat. She will insist on trying to drag them under the bed. I was not happy about this, though luckily this time, the particular rat in question no longer held an opinion. ☠️
