I recently used this painting of Joan of Arc annielouisaswynnerton.com/joan-of-arc-... to depict an NPC. If I used AI I might have asked for some similar features (her age, armour, etc.) but I wouldn't have thought to ask for that pose. It led my thoughts on that character in a different direction.
Great point here about how using gen AI to mimic existing stuff may limit what people imagine / explore.
Strategy games with fog of war is a good one.

I think you are running games for different players much more than I am. I have my regular group and we have our rhythm. But I could see it being more of a challenge with an open table.
