If one has a better listening experience trying expensive cables, even if it's due to variations in the ear itself, it's easy to become convinced the cable did it. Plus lack of knowledge in experimental protocols to control for bias.
I think there is also something else, a friend forked in a high end audio shop during his studies, and people seemed convinced of the oddest things, like cables sounding better in one direction than the other. My guess is that the ear itself can sound different from one listening to the other. 1/2
