Heat up the pan before the oil goes in (the heat kind of closes “pores” in the metal), oil in, food in, let it sit and brown for longer than you want to and it’ll unstick for you to flip it when it’s ready to unstick. Except for eggs and certain delicate fish. Nonstick for those.
