And depending on how it's configured, your provider could give up *way more* details than proton could in this situation.

And all of that costs way way way more in time and real costs, than a proton subscription.
But also you are undoubtedly looking at bringing your own IPs to your provider and you need to roll your own End to End Encryption.

The problem lies in the fact that likely your provider *has the same problem as proton*! They *must* listen to the law.
So this means you have to send from an IP that isn't on any blocklists and is considered in good reputation.
Things like dynamic IPs (consumer) are a nonstarter.
As others have mentioned in this giant thread, most VPS provider IPs are on these lists.
So yes, it's possible.
The simple answer is mostly "anti spam has made it hard for even legitimate email to make it to your inbox"
But it's complex, it has to do with many factors, major one being the reputation or class of IP address you're sending from.
Consumer IPs are on blocklists. Every email host will reject them
