A trussed lamb shoulder that's been roasted overnight, coated with a marinade of garlic, rosemary and oregano, and sitting atop some roasted onions in its own jus
Lemony garlic potato wedges that almost look confit but not quite, and the shredded, tender lamb in the background, along with the reduced jus. Some asparagus sits to the side in a rather perfunctory way.
Cooked some lamb shoulder for 12h overnight. Served with some potatoes slow cooked for about 2h in stock and lemon, then crisped in a hot oven. A luxurious Easter Sunday lunch.
