That’ll be fine. Just don’t short yourself on the butter. ;) When done right, they come out really crispy on the outside but mochi-chewy and moist in the middle.

Yes, potato starch will work fine. And I’ve also cheated and used 2% milk + sour cream instead of buttermilk. Or milk + buttermilk powder. It’s not a picky recipe.

This is my mochi waffle recipe that I’ve adjusted over time. Definitely a good use of glutinous rice flour. :)
