yeah it can be turned off or the hold time adjusted (up to 2 seconds, default is 0.7) before the shape kicks in. undo will also turn it back into the original stroke.
It basically turns into the shape tool (line/curve/rectangle/elippse) so you only adjust the points like if it was on a vector layer
