I went to noma way back in 2011 and he was taking coats at the door when we arrived, didn’t even clock who he was at first but seemed v chill, but clearly a psychopath behind the scenes..

Gonna finish off the beef stew I started making the other night - I’ve pressure cooked some shin, just need to simmer some carrots, potato, leek and finish with mustard

Was gonna make carbonara.. started frying guanciale and realised I somehow had no Parmesan or pecorino 🙄 not sure what I’m going to end up with now!

I know Donald has more experience in this than me but I think generally speaking unless you’ve left them in direct light or exposed them to some kind of temperature shock they’ll be fine!
