He devotes his life to serving and protecting Stannis and his family using whatever skills he may possess. He feels he owes Stannis for making him the man he has become since the siege of Storm's End. This debt may be damn near impossible to repay.

Davos becomes close to Stannis's daughter Shireen Baratheon. He is fiercely protective of her and loves her as though she were his own daughter. She teaches him to read after learning that he cannot do so as he never learned. This helps him to better serve Stannis.

Ser Davos Seaworth is known as the Onion Knight thanks to Stannis Baratheon. This is due to Davos having smuggled food in to Stannis and his starving men at Storm's End. This event sparks the end of Davos's days as a smuggler. He henceforth serves Stannis loyally.
