Oh man... smoked gouda is legit, as is pepper jack... cheddar is so universal though. Picking a "favorite" is very difficult. We definitely use more cheddar than anything else, but I love camembert.
I would say that around that same time I started dabbling more outside of R. I needed python for OpenCV and then I needed JS for gSheets scripting. I still go back to R for making plots for my research. Seems like Python significantly reduced friction by integrating lessons from the R community.

I wonder if it's due to locality. Communities where these datacenters go in suck up local water supply and electric supply. This causes things on a local scale to go super "shitty" for locals.
Being in Ag, I'm not shocked at all to see the area of those fields being equivalent in water consumption.
