I feel like this doesn't always get mentioned, but when I'm pulling the shuttle thread tight, I make sure to slack my index finger on the hand holding the circle of thread. That allows for the slack needed to flip the knot.

You can always just do swatches with different hook sizes to see how you like the density of the fabric. For my amis, I like a 4mm hook with worsted weight, but your tension will affect what you like!

I find it's a little more stretchy than your typical chain, just FYI, if you need to measure out the item you are making yourself. I use it as a base for bracelets I make and when I did the chain, I would do 50-55 stitches, now I do 40-45.
