I’m just saying the resemblance with Suyin and her family to Sokka is….eerily uncanny

Being serious here for a sec, given the very "damsel in distress" dialogue Toph is saying in the images, its just as likely (imo more so) that this was intended more as a case of Sokka's ego and him embellishing for comedic effect.

Not necessarily an indication Suki and him are not together more.
