"Whole" wheat flour is flour using all parts of the wheat grain including the sharp bits. We use Dakota Maid Whole Wheat for best results in our recipes. If you use a whole wheat with a coarser grind, sift them out but don't throw them out, use it to line sheet pans for free form bread baking!
