My go-to substitute for cookies are flax eggs. 1 Flax egg = 1 tablespoon ground flax seed + 3 tablespoons water, mix and let sit for several minutes until it thickens.

IMO, flax eggs work best if you use a blender to mix the ground flax seed and water. You’ll get a better “egg” consistency.

Personally, I only use egg substitutes in cookie recipes. Egg is typically used as a binder here and is extremely easy to replace without affecting taste or texture. I look for vegan recipes to make cakes, muffins, etc.
