GC grows best with high CO2. As a med student at Boston City, we used candle jars well into the ‘80s. The candle uses up the oxygen then flickers out, leaving CO2.

A resident once complained someone was maliciously blowing out her candles. She was given a “Guaiac Award” at the annual roast.

Costco makes a Kirkland brand Chateauneuf-du-Pape that is a great value!

We pair it with beef stew dishes and flank steak but it also goes great with hard cheeses like Comte.

This year for Passover we skipped the Manischevitz when making our Charoset.

Inexpensive Tawny Port really made it pop.

And the symbolic mortar got Costco DEI points, so there’s that!

I hear goat cheese and my mind goes first to a Sauvignon Blanc pairing.

But I’m guessing the fig jam is the dominant flavor, so I’d propose a glass of Amarone. It’s powerful, acidic and slightly raisinated, which would stand up to the fat in the pork.
