We create ours live by having a eurorack analog video synthesizer near the end of our workflow that content feeds through before reaching the computer that handles final mi, video mapping and output. It creates more of an analog broadcast TV feel than a VCR though.

There are easier recipes out there. We just find ours to be particularly good.
And you could totally use frozen vegetarian mock chicken pieces, or dehydrate tofu by baking it, rather than our fairly complicated seitan recipe.

Seitan Mock Chicken:

2 cup vital wheat gluten

¾ cup chickpea flour

1 cup all-purpose flour

¼ tsp cardamom powder

1 tsp msg powder

½ tsp paprika

1 TBS chickenless bouillon paste

½ teaspoon onion powder

½ teaspoon garlic powder

½ tsp coriander

¼ tsp white pepper

¼ tsp black pepper

½ tsp celery salt

¼ teaspoon salt

1 TBS soy sauce

1 tsp mirin

½ tsp sesame oil

⅔ cup water

1. Add about an inch of water to a pot with a steamer basket and bring to a light boil.

2 In the meantime, whisk together the vital wheat gluten, flour, vegetable broth powder, onion powder, garlic powder, and salt in a medium bowl.

Mix the wet ingredients.

pour them into the dry and mix to form a ball of dough.

Lightly grease the steamer basket, then tear off bite-sized pieces of the seitan dough and place them in a single layer in the steamer basket. Cover, and steam the seitan for 10 minutes.

When the seitan is done steaming, remove from the steamer and let cool until the surface becomes less shiny. From here it may be used in place of chicken in any dish, or breaded and fried as mock chicken nuggets.

Quick & Easy Vegan Orange Chicken:

Protein:

1 lb seitan or other mock chicken

¼ cup cornstarch (or sub with potato starch)

⅓ cup vegetable oil (or any neutral tasting oil (if you're Air Frying, sub with 2 tbsp of oil))

Sauce:

1 cup freshly squeezed orange juice (pulp strained (about 4-5 medium sized oranges))

2 tbsp white vinegar (or rice vinegar)

¼ cup + 2 tbsp brown sugar

2 tbsp regular soy sauce

2 cloves garlic (minced)

¼ tsp ginger powder (or sub with freshly grated ginger)

1 tbsp cornstarch (or sub with potato starch)

½ tsp red chili flakes (optional if you prefer it spicy)

In a small bowl, combine sauce ingredients. Mix well and set aside.

Make Seitan according to recipe into bite size pieces, about 1.5-inch pieces. Do not pat Seitan dry after steaming, this will allow the cornstarch to adhere.

Transfer pieces of seitan into a large bowl, followed by cornstarch. Mix to coat each piece evenly with tongs.

Heat vegetable oil in a wok or large pan on medium-high heat. Carefully lower coated seitan into the oil and quickly spread apart. Allow the pieces to sear and form a golden crust, about 5-6 minutes on each side and avoid stir-frying them. Flip Seitan over and cook on the other side until golden brown.

Remove from oil and place seitan on a paper towel lined plate to cool and drain. Pour out any excess oil from pan.

In the same pan set over medium high heat, pour sauce in. Stirring consistently until the sauce bubbles and thickens, about 2-3 minutes.

Toss in fried chicken until pieces are coated in sauce. Garnish with orange zest, sesame seeds and green onions. Serve & enjoy!

Vegetarian orange chicken isn't that hard to make.
