One last thing I haven't ruled out is that our oven might run quite hot. We already know the digital built-in thermometer is off, and we have a separate oven thermometer, but I wonder if that needs to be calibrated too and the baking temperature has just been too high.

A marble loaf cake, with the chocolate marbling coming further down into the cake than the previous attempt but still quite thick and kind of clunky. The overall crumb is more consistent and closer to what's expected from this type of cake.

I also added extra cacao and some espresso powder to the chocolate batter and used a different strategy for marbling. Finally I baked it by testing rather than time (it was done so much faster than the recipe said too?!?!)

Overall, better texture. Not sure I'll use this recipe again...?

I tried again while this was still fresh in my mind.

I used caster sugar and increased the amount of liquid-- almost double what the recipe suggested so I don't know what's going on there (it's from Paul Hollywood's book so I'd assume it was solid???)

A loaf cake with no icing. It's sliced to reveal the inside, mostly vanilla with a layer of chocolate at the top. The crumb is okay in the chocolate, but a bit tight in the vanilla. The outside is a bit darkly done but not burnt.

I added a roasting pan with hot water to the oven to try preserving/adding some moisture. I'm glad I did, because it baked FAST and had nearly a crust on it 😆 But aside from being a little dry and the marbling failing (understandably), it tasted fine. I'll try again!

Since I'm taking a highly experimental approach to all this (gleefully reinventing the wheel), I decided to try using granulated sugar instead of caster.

I suspect this is the reason the mix was QUITE dry (?). I knew it seemed off, but again, decided to see what happened and bake it anyway.

I tried baking a marble loaf the other day.

Right now I'm learning the differences between ingredients (e.g. caster sugar vs. icing sugar) and often realizing I don't have what I need. Then I have to decide whether to try a recipe with a substitute.

No it isn't! There is a lot of skill and craft to good typesetting and this is aiming to take jobs from people to automate what should be a human process!

I think the inside structure is okay, but a little dense at the bottom. Given that plus the light-ish crust color, I think I probably could have baked it for another few minutes.

Tastes great at least 😊 Overall I'm pleased.

I also subbed unsweetened vanilla almond milk & white vinegar for the buttermilk since I didn't have that, either 😆

I also added some chocolate chips.

I think it came out pretty well for a first attempt, especially given the added variables of an extra ingredient plus a substitution.

One thing that I feel like isn’t been talked about much is how career progression for almost all of us is GONE. We are lucky to have a job at all, but we certainly aren’t getting promotions. Even the folks who keep their jobs end up with stagnant careers w/ no upward mobility.
