It's just such a trope that once you mention you're an artist, people will talk about their projects and stuff to try and get you involved. Everyone has dreams, but it's rare people will seriously follow through (and with the $$$ to back it up). And children's books are just infamously slave wages.
Everyone wants to publish a children's book. Everyone thinks they have a great idea that will make a bunch of money. Reality is that children's books almost never make any money, artists almost never get any royalties after payment, and payment is almost always way way below min wage.
Them: So what do you do?
Me: I'm an artist.
Them: Oh, do you do children's books? I'm a part of a writer's group and a lot of them are writing children's books--
Me: I take it back, I'm not an artist, I've never been an artist, I've never seen a pencil before in my life.

Good luck though! And don't be afraid to adjust things as you go. You can try something for like two weeks, see what's working/not, change, etc. <3
A lot of people work 9-5 jobs and often expect those times to be slow/belated replies anyway. If someone has an issue with you not replying instantly regardless, like...???
But testing out different schedule ideas might help. Or using the pomodoro method (I do 15/5, personally).
