also, it’s VERY important that the lemon chicken be done right - that is, cut into strips, à la almond chicken (see photo), NOT served as fully breaded, bite sized pieces, à la orange or General Tso’s chicken. this is where people often get it wrong…..

classic American Chinese restaurants just aren’t as numerous as they were when I was growing up, and even WORSE, lemon chicken (my favorite menu item) has become exceedingly rare. if you know other reputable lemon chicken sources in the Seattle area please leave a comment.
