In my option an Italian beef is a good “soggy” option. For the aus jus I used onions, mushroom, shallots, garlic, seasonings, beef trimmings from when I sliced the beef, beef stock, and a touch of soy sauce.

Drained the mushrooms and onions out at the end to use for topping under the cheese
