I sculpted the head and body, and then retopologized around the shapes. I didn't make a cylinder specifically, but just followed the curves.

Hi Feynt! I don't think that I have anything particularly interesting going on with the ears. Weightpainting was tricky to make it smooth, but otherwise they are mostly tubes. You could get the Viwi files and study the topology if you will.
