Not sure about chef‘s knives so this may be totally different, but I always would use a diamond sharpening stone for like pocket knives and what not. Wetting the stone and using it that way always seemed to actually give me pretty good results

It’s worse, we know a bunch of modalities/ therapy skills really well so if those aren’t working/we need a therapist they are very hard to find, especially ones that might see us as fully clients and not colleagues. I’ve overall had good luck but this is my experience
