I emit invisible plant-killing rays despite my gardener mother, so anyone who can keep a plant alive, let alone design, plant, cultivate, and maintain a garden is deeply impressive to me
(although since I recently learned to make bread maybe I can learn not to kill plants by thought?)
I love how you just got here, looked around, and promptly invoked all the small gods of local plant life to come build your garden. I would not be surprised if you landed on another planet and two weeks later had beds of sixteen different plants that thrive on methane snow, which would be awesome.
(not mentioning the absolute unit of a thunderstorm we had in Portales last night, DAMN that was impressive)
Loved the Williamson lectureship, as always: so good to get to catch up with friends and share stories and have great conversations on and off panels. We look forward to it every year.

it's kind of hilarious how I spent my entire adult life unable to make bread except the very hyper-dense whole-wheat buns I learned from my father and now that I can apparently DO it, it's immediately become a really satisfying, relaxing experience

far as I can tell, that's it. To add body and nutty creaminess to the pesto without paying the pine-nut premium? It strikes me as a ton of horrible allergic reactions waiting to happen.
if you can find the buffalo mozzarella, it is SO worth trying. I can sometimes get it at the whole foods or a couple of other pricy gourmet markets here, or a good Italian deli (I miss the one we had in Baltimore, their cheese and oil were unbelievable).
For myself, no, because I tend to find it drowns out the subtle flavor of the mozzarella, but this is largely a Boy Do I Not Love Being A Supertaster problem.
I thought that was weird too when I first tried it, but it's worth a shot: the lack of the sharp acrid, acid raw garlic taste makes you not need the creaminess of the pine nuts to balance it.
(pesto recipe: basil, olive oil, salt, pepper, grated parmigiano and pecorino, rough chop and use stick blender to mix. exposed surface will go dark ochre brown quite quickly even in a plastic container but this does not affect taste or quality. freezes very well, can thin w/olive oil for sauces.)
today I woke up before sunrise trundling west across Kansas at 60 mph and tomorrow I will be up early and go denude the whole foods of whatever basil they can offer and any tomatoes that taste of anything; life on trains is both weird and delightful and exhausting
tomorrow I gotta make ciabatta, buy some decent tomatoes, god help me, get hold of a ton of fresh basil and some more good cheese, all because this tiny restaurant in NYC had such a great version and I wanted it again and could not have it because Passover
(not allergic to cashews, just don't particularly think they belong in pesto) and frankly the bare-bones version of pesto I make with 5 ingredients tends to taste better on sandwiches ANYWAY but christ, I thought the tomatoes would be the hard part this time of year

so I am for lengthy and uninteresting reasons desperate to eat a goddamn caprese sandwich and it looks like I might as well make not only the bread but also the PESTO since pretty much all store-bought pestos are full of cashews for reasons that escape my understanding
